Easy chicken meal prep

Each week I bake about 4 pounds of chicken to eat for dinner, throw on salads, add to soup broth, add to pasta for the kids, etc.

Yesterday I put some in the oven for 40 min– we had some for dinner (with lentils I had in the freezer and zucchini I grilled quick in the grill pan), and the rest is in the fridge to use throughout the week! Continue reading

Banana Oatmeal Flax Muffins and Okinawa Tidepools

Scott was in charge of planning our first weekend (read more about Family Habit #1: Take turns planning the weekend), which he gladly accepted because that meant I was next and had to plan the upcoming four-day weekend.  Clearly this is something we need to practice because we both try to avoid coming up with weekend plans, and as a result just talk about it and do nothing.  But none of that anymore!  Back to Scott’s weekend—it was nice!
